Grand Dining Room

The Grand Dining Room is a stately study, a tribute to the spirit of the 5-star tented hotel restaurants in Europe that inspired the dignified yet convivial ambiance. Furnished with rich woods, designer tapestry fabrics and oversized armchairs, the spacious dining area exudes classic splendor. The tables are beautifully set with bone china, sparkling Riedel crystal, gleaming silver and fine cotton linen.

Remarkably, as magnificent as the Grand Dining Room’s decor is, guests always feel completely at ease in its splendor. Much of this is a direct reflection of the formally dressed and classically trained wait staff, who graciously serve course after course of European-inspired cuisine or delicious alternatives like the light and healthy Aquamar Vitality Cuisine and plant-based options. And on board, Regatta, Insignia, Nautica and Sirena specialties from Jacques and Red Ginger are served nightly in the Grand Dining Room. Since variety is essential, the menus change daily with a brilliant selection of at least ten appetizers, soups and salads and twelve main courses at dinner.

Tuscany

In Italian, Toscana means Tuscan, and just as Tuscan cuisine has evolved from rich family traditions, many of our recipes come from the mothers and grandmothers of our own Italian kitchen staff. The masterfully prepared dishes, presented on elegant custom-made Versace china, exemplify the essence of Tuscany and celebrate Italy’s culinary passion. Perhaps start the evening with an appetizer of octopus carpaccio with champagne vinaigrette or the timbale of artichokes and parmesan cheese with black truffle sauce. Classic dishes from other regions of northern Italy are also featured, such as Minestrone alla Genovese, Lasagna al Forno alla Bolognese and Osso Buco alla Milanese.

Polo Grill

Polo Grill embodies all the elements of a classic steakhouse and expresses them with timeless reverence. The tradition-conscious decor consists of crisp, white linen tablecloths, dark wood furniture and sleek, burgundy leather high-back chairs. Each course represents the definition of time-honored favorites, especially the beef dishes, which are all USDA Prime and dry-aged for 28 days to enhance tenderness and flavor.

Succulent seafood dishes like grilled swordfish and whole Maine lobster gratinée are also classics in their own right. Also the classic Caesar salad is prepared according to the old tradition at the table and with a lot of flavor.

Terrace Café

Informal and lighthearted, the Terrace Café is wonderfully inviting at any time of day – feel free to dine indoors or al fresco at one of the shaded teak tables on the terrace. Enjoy a rich breakfast offer first thing in the morning. At lunch, the extensive menu changes with internationally inspired dishes beautifully complemented by flavorful roasts and grills and the magic of the pizza oven. You are free to dine indoors or outdoors at one of the shaded teak tables on the terrace.

In the evening, the impeccably dressed wait staff shines, and the cuisine takes on a more refined flair. Lobster tails and lamb chops are prepared to order, and freshly prepared, hand-cut sushi and sashimi await your selection. Tomorrow you can expect a completely different set of menus that will delight you.

Sometimes the ultimate luxury is casual dining with all the American favorites, a relaxed style that Waves Grill embodies. Located in a spacious, shaded area just steps from the swimming pool, Waves Grill offers an extensive and delicious lunch menu. During lunch, chefs grill gourmet burgers, hearty barbecue dishes and succulent seafood to order in the open galley, accompanied by sides like garden-fresh salads and crispy, hand-cut truffle fries with grated, aged Parmesan.
